Pancake day in Russia

In Russia they celebrate Pancake day before Lent - Just the same as in the UK - except it lasts a week and is called the Maslenitsa week.

During this week they make pancakes or blinis, as they call it in Russia.

There are different types of blinis: small (oladushki), big (blini), potato pancakes (draniki), cottage cheese pancakes (sirniki).

The traditional Russian Pancake recipe is 2 eggs, 1 tablespoon white sugar, 1/3 teaspoon salt, 1/2 cup all-purpose flour, 2 1/2 cups milk, 1 tablespoon vegetable oil, 1 tablespoon butter. To make blend all the ingrediens into a smooth dough and fry in the pan.
